Lentil stew with chorizo
What will you need?
Ingredients
– 400 g Verizzia lentils
– 350 ml water
– 250 g bacon
– 100 g chorizo sausage
– 3 cloves of garlic
– 2 carrots
– 2 bay leaves
– 1 large onion
– 1 green bell pepper
– 1 green onion
– 1 meat broth cube
– 1 can of tomato puree
– Fresh basil
– Fresh parsley
– Olive oil
– Salt
– Pepper
– 350 ml water

Step by step
1-Prepare the ingredients:
Peel and slice carrots. Chop the peppers, onion, garlic, parsley, basil and green onion. Cut the chorizo and set aside along with the bacon.
2-Rinse the lentils:
Rinse the Verizzia lentils (or peas if you prefer) until the water runs clear.
3-Cook the chorizo and bacon:
Brown them in a clean pan, without oil, until they release the fat. Set aside.
4-Sauté the vegetables:
In the same pot, sauté the onion, carrot, garlic and bell pepper with olive oil for 5 minutes and season with salt.
5-Add the sautéed vegetables and the meat:
Add tomato puree, chorizo and bacon. Stir everything together.
6-Add lentils and water:
Add the lentils (or peas) and water. Add the stock cube.
7-Cook and season:
Add the bay leaves and let it cook for 10 minutes. Then, add a pinch of pepper and mix in the herbs before serving.
That’s it! Now you can enjoy a dish full of flavour.
